It’s Wednesday. So I guess it’s time for a little insight into what I’ve been eating, courtesy of Peas and Crayons. This is the first WIAW since Healthy Living Cailín’s inception and my first WIAW in a while.
Breakfast was a delicious bowl of porridge – one of my favourite foods ever! I’m a simple creature
To change things up a little bit I made it with Alpro’s Hazelnut Drink. This stuff is a little bit more indulgent than my usual almond or coconut milk. It has more calories and fat than both, and it’s a chocolate milky brown colour. As you can see from the picture below, I’ve had it in my cupboard for quite some time…
I figured now is the time to use it since it’s no longer 2012. It still tasted good – in coffee, in my porridge oats and glugged from the carton!
I don’t think oats/porridge ever look photogenic so I spent ages on Pic Monkey faffing around with a few filters trying to make it not look like a bowl of you-know-what.
It tasted yum. I added some cinnamon and a few drops of vanilla extract. Sugar wasn’t needed as the hazelnut milk is sweet enough.
Lunch – was an old student favourite of baked beans but served atop the not so student-friendly Spelt and Honey Bread and with a fancy dash of cracked black pepper. This spelt stuff is a bit more expensive than regular bread but I’m led to believe that it has less carbs and is easier to digest than the normal white or wholemeal stuff. I should really looks this up before I start spreading those kind of rumours.

Look at those cute mushroom shaped slices! For the record I only had one slice of bread. I’m monitoring my calorie intake on myfitnesspal.com and it’s making me so aware of my carb, fat and protein intake. Apparently I like carbs and fat but no so much protein. I’ll have to change that.
And so I did with dinner – Chicken plus salad with mixed seeds and pine nuts.
Taking a leaf out of Jamie Oliver’s book I beat the chicken breast, between some parchment, until is as really flat then, roll in salt, pepper and cajun seasoning and pan fry in a small blob of EVOO until golden and cooked through. Yum!
